Crispy Lemon Baked Salmon

Ingredients
- 1 fillet of salmon
Lemon-Mayo Sauce:
- 1/2 cup mayonnaise
- Juice of 1/2 a lemon
- Zest of 1/2 a lemon
- 1 scallion, minced
- 1/2 tsp. white pepper
- 1 tsp. salt
- 2 Tbsp. heavy cream
Crust:
- 3/4 cup panko breadcrumbs
- 2 Tbsp. of olive oil
- 1/2 tsp. salt
Instructions
- In a small bowl combine mayonnaise, scallion, lemon juice, lemon zest, salt, and pepper. Do not add the heavy cream!
- Prepare your salmon fillet by deboning it, rinsing it, and drying it off with a paper towel.
- Place salmon on a sheet of tinfoil on a cookie sheet, and cover with half of the lemon-mayo mixture (do not contaminate the sauce with the salmon so don't double dip the spoon).
- In another small bowl combine the panko, salt and olive oil, mixing it so that the oil in incorporated with the panko.
- Sprinkle the panko mixture over the mayo sauce on the salmon until the fish is covered.
- Bake in an oven at 350°F for about 8-10 minutes (depending on the thickness of the fillet), and then broil on high for 1-2 minutes so that the panko turns to a golden brown.
- While you are baking the salmon, add the heavy cream to the rest of the lemon-mayo sauce to thin it out a bit. This will be a sauce to go on top of your fish after it is cooked.
